Ingredients
- 🥩 Lamb or Beef – 300g thinly sliced
- 🍆 Eggplant – 1 medium, cubed
- 🍅 Tomato paste – 2 tbsp
- 🧄 Garlic – 3 cloves minced
- 🌿 Parsley – handful, chopped
- 🫓 Pita bread – 2 pieces for serving
Instructions
- 🍳 Brown the meat in a hot skillet until cooked through and set aside.
- 🍆 Sauté the eggplant cubes in olive oil until golden brown and tender.
- 🍅 Stir in garlic and tomato paste, cooking for 2 minutes to release aromatics.
- 🥘 Combine the meat back into the skillet and simmer with a splash of water for 5 minutes.
- ✨ Garnish with fresh parsley and serve hot with toasted pita bread.
