Ingredients

  • 🍆 Eggplant – sliced into rounds
  • 🌶️ Harissa paste – 2 tablespoons
  • 🧀 Fresh Mozzarella – sliced or torn
  • 🫒 Olive oil – 2 tablespoons
  • 🌿 Fresh mint or cilantro – for garnish
  • 🧂 Salt and pepper – to taste

Instructions

  • 🔪 Brush eggplant slices with olive oil and season with a pinch of salt.
  • 🔥 Grill eggplant over medium-high heat for 3–4 minutes per side until charred and tender.
  • 🥄 Spread a thin layer of harissa paste over each grilled eggplant slice.
  • 🧀 Top with fresh mozzarella and grill briefly or cover until the cheese begins to soften.
  • ✨ Garnish with fresh herbs and serve immediately while warm.
