Ingredients
- 🍆 Eggplant – sliced into rounds
- 🌶️ Harissa paste – 2 tablespoons
- 🧀 Fresh Mozzarella – sliced or torn
- 🫒 Olive oil – 2 tablespoons
- 🌿 Fresh mint or cilantro – for garnish
- 🧂 Salt and pepper – to taste
Instructions
- 🔪 Brush eggplant slices with olive oil and season with a pinch of salt.
- 🔥 Grill eggplant over medium-high heat for 3–4 minutes per side until charred and tender.
- 🥄 Spread a thin layer of harissa paste over each grilled eggplant slice.
- 🧀 Top with fresh mozzarella and grill briefly or cover until the cheese begins to soften.
- ✨ Garnish with fresh herbs and serve immediately while warm.
