Ingredients

  • 🍫 200g Dark chocolate – high quality (70% cocoa)
  • 🫒 1/2 cup Extra virgin olive oil – premium quality
  • 🧂 1/2 tsp Flaky sea salt – for finishing
  • 💧 1/2 cup Water – for melting
  • 🍯 1 tbsp Honey or maple syrup – optional for sweetness

Instructions

  • 🍫 Melt the dark chocolate with water in a heatproof bowl over a pot of simmering water.
  • 🥣 Remove from heat and slowly whisk in the olive oil until the mixture is smooth and glossy.
  • ❄️ Place the bowl over an ice-water bath and whisk vigorously until the mousse thickens to a fluffy consistency.
  • ✨ Divide the mousse into serving glasses and refrigerate for at least 2 hours to set.
  • 🧂 Sprinkle with a generous pinch of flaky sea salt right before serving to balance the flavors.
