Berry Pulao

Ingredients

  • 🍚 Basmati Rice – 2 cups, soaked
  • 🍓 Mixed Berries – 1 cup (strawberries, blueberries, raspberries)
  • 🧅 Onion – 1 medium, chopped
  • 🫘 Cashews – 1/4 cup
  • 🌿 Mint Leaves – for garnish
  • 🍶 Ghee – 2 tbsp
  • 🌶️ Green Chilies – 2, slit
  • 🧂 Spices – (cumin, coriander, garam masala)

Instructions

  • 🔥 Heat ghee in a pot, add cashews and sauté until golden.
  • 🧅 Add onions and green chilies and sauté until onions are translucent.
  • 🍚 Add rice and spices, and sauté for a minute.
  • 💧 Add water (double the amount of rice) and salt to taste; bring to a boil, then simmer until rice is cooked.
  • 🍓 Gently stir in the mixed berries and cook for another 2-3 minutes.
  • 🌿 Garnish with mint leaves and serve hot.
