Ingredients
- chickpeas 🫘 – 1 can (15oz), drained and rinsed
- tahini 🥣 – 1/4 cup
- lemon juice 🍋 – 3 tbsp, freshly squeezed
- garlic 🧄 – 2 cloves, minced
- parsley 🌿 – 1/4 cup, finely chopped
- tomatoes 🍅 – 1 small, finely diced
- olive oil 🫒 – 2 tbsp, plus extra for drizzling
- cumin 🧂 – 1/2 tsp
Instructions
- 🥣 Blend the chickpeas, tahini, lemon juice, garlic, and salt in a food processor until smooth.
- 💧 Add a splash of ice water while blending to achieve a light, creamy consistency.
- 🔪 Mix the finely chopped parsley and diced tomatoes in a small bowl with a drizzle of oil.
- 🍽️ Spread the hummus on a plate and create a well in the center using a spoon.
- ✨ Top the hummus with the parsley-tomato mixture and a final drizzle of olive oil before serving.
