Ingredients
- 🌱 Bhindi (Okra) – 500g, washed and chopped
- 🥣 Dahi (Yogurt) – 1 cup, whisked
- 🧅 Onion – 1 medium, finely chopped
- 🧄 Ginger-Garlic paste – 1 tbsp
- 🌶️ Green chilies – 1-2, finely chopped
- 🌿 Coriander powder – 1 tsp
- 💛 Turmeric powder – 1/2 tsp
- ❤️ Red chili powder – 1/2 tsp (optional)
- 🧂 Salt – to taste
- 🫘 Oil – 2 tbsp
Instructions
- 🔥 Heat oil in a pan, add bhindi and sauté until slightly browned.
- 🧅 Add chopped onions and ginger-garlic paste, sauté until golden.
- 🌶️ Add green chilies, coriander powder, turmeric powder, red chili powder (if using) and salt. Sauté for a minute.
- 🥣 Reduce heat, add whisked yogurt and cook on low heat, stirring continuously to avoid curdling, until the gravy thickens.
- 🌿 Garnish with fresh coriander leaves and serve hot with roti or rice.
