Ingredients

  • 🌾 All-purpose flour (Maida) – 2 cups
  • 🥔 Potatoes – 2 boiled and mashed
  • 🧅 Onion – 1 medium finely chopped
  • 🌿 Cumin & Fennel seeds – 1 tsp each
  • 🌶️ Green chili & Ginger – finely minced
  • 🧂 Spices (Turmeric, Chili powder, Garam masala) – to taste
  • 🥘 Oil – for dough and deep frying

Instructions

  • 🥣 Mix flour, a pinch of salt, and warm oil to form a firm dough; let it rest for 30 minutes.
  • 🍳 Sauté cumin, fennel, onions, ginger, and chilies in a pan until fragrant.
  • 🥔 Add mashed potatoes and dry spices to the pan, cook for 5 minutes, then let the mixture cool.
  • 🥟 Roll small portions of dough, stuff with the potato-onion filling, and seal the edges tightly.
  • 🔥 Deep fry the kachoris on low-medium heat until golden brown and crispy; serve hot with chutney.
