Ingredients
- 🌾 All-purpose flour (Maida) – 2 cups
- 🥔 Potatoes – 2 boiled and mashed
- 🧅 Onion – 1 medium finely chopped
- 🌿 Cumin & Fennel seeds – 1 tsp each
- 🌶️ Green chili & Ginger – finely minced
- 🧂 Spices (Turmeric, Chili powder, Garam masala) – to taste
- 🥘 Oil – for dough and deep frying
Instructions
- 🥣 Mix flour, a pinch of salt, and warm oil to form a firm dough; let it rest for 30 minutes.
- 🍳 Sauté cumin, fennel, onions, ginger, and chilies in a pan until fragrant.
- 🥔 Add mashed potatoes and dry spices to the pan, cook for 5 minutes, then let the mixture cool.
- 🥟 Roll small portions of dough, stuff with the potato-onion filling, and seal the edges tightly.
- 🔥 Deep fry the kachoris on low-medium heat until golden brown and crispy; serve hot with chutney.
