Ingredients

  • 🍚 Maida (All-purpose flour) – 1 cup
  • 🥄 Besan (Gram flour) – 2 tbsp
  • 🍶 Yogurt – 2 tbsp
  • 💛 Turmeric powder – a pinch
  • 💧 Water – as needed
  • 🍬 Sugar – 1.5 cups
  • 🍋 Lemon juice – 1 tsp
  • 🌿 Saffron strands – a few
  • 🛢️ Ghee or Oil – for frying

Instructions

  • 🥣 Prepare batter: Mix maida, besan, yogurt, turmeric, and water until smooth.
  • ♨️ Ferment: Let the batter rest for 1-2 hours in a warm place.
  • 🍯 Make sugar syrup: Boil sugar and water with lemon juice and saffron until slightly thick.
  • 🔥 Fry jalebis: Heat ghee/oil, pipe batter into spiral shapes, and fry until golden and crispy.
  • 🍯 Soak in syrup: Dip fried jalebis in warm sugar syrup for a few minutes, then serve warm. ✨
