Ingredients

  • 🍚 Rice – paella or medium-grain
  • 🍋 Lemon – for juice and zest
  • 🧅 Onion – chopped
  • 🧄 Garlic – minced
  • 🌶️ Bell pepper – sliced
  • 🌿 Vegetable broth – or chicken broth
  • 🫒 Olive oil
  • 🥘 Saffron threads – pinch (optional)
  • 🌿 Parsley – chopped for garnish

Instructions

  • 🔥 Sauté onions and garlic in olive oil until softened.
  • 🍚 Add rice and saffron (if using), cook for 2 minutes.
  • 🍋 Stir in lemon zest, bell pepper, and vegetable broth. Bring to a simmer.
  • 🥘 Reduce heat, cover, and cook until rice is tender and liquid is absorbed (~20 mins).
  • ✨ Garnish with fresh parsley and lemon wedges. Serve hot.
