Ingredients
- 🍚 Rice – paella or medium-grain
- 🍋 Lemon – for juice and zest
- 🧅 Onion – chopped
- 🧄 Garlic – minced
- 🌶️ Bell pepper – sliced
- 🌿 Vegetable broth – or chicken broth
- 🫒 Olive oil
- 🥘 Saffron threads – pinch (optional)
- 🌿 Parsley – chopped for garnish
Instructions
- 🔥 Sauté onions and garlic in olive oil until softened.
- 🍚 Add rice and saffron (if using), cook for 2 minutes.
- 🍋 Stir in lemon zest, bell pepper, and vegetable broth. Bring to a simmer.
