Ingredients

  • 🥬 Kale – 1 bunch, stems removed and torn into bite-sized pieces
  • 🥣 Gram Flour (Besan) – 1/2 cup for the light batter
  • 🧂 Spices – Chaat masala, turmeric, and red chili powder
  • 🍶 Yogurt – 1/2 cup, whisked until smooth
  • 🍯 Chutneys – 1 tbsp each of sweet tamarind and spicy mint-coriander
  • 🧅 Red Onion – 1/4 cup, finely chopped
  • 🍎 Pomegranate Pearls – 2 tbsp for sweetness
  • 🥨 Sev – 2 tbsp crispy chickpea noodles for garnish

Instructions

  • 🥬 Wash and thoroughly dry the kale leaves to ensure maximum crispiness.
  • 🥣 Lightly coat the leaves in a thin batter of gram flour, water, and spices.
  • 🔥 Air-fry or deep-fry the coated kale until it becomes light and crunchy.
  • 🍶 Place the crispy kale on a plate and drizzle generously with yogurt and chutneys.
  • ✨ Garnish with chopped onions, pomegranate, sev, and a pinch of chaat masala.
