Ingredients
- 🧀 Fontina cheese – 300g, cubed or grated
- 🥛 Whole milk – 1 cup, for soaking
- 🥚 Egg yolks – 2 large yolks
- 🧈 Butter – 1 tbsp, unsalted
- 🍞 Crusty bread – sliced and toasted for serving
- 🧂 White pepper – a pinch for seasoning
Instructions
- 🥛 Soak the cubed Fontina cheese in milk for at least an hour to soften it.
- 🔥 Place the cheese and milk mixture in a double boiler over simmering water.
- 🥄 Add butter and stir constantly until the cheese is fully melted and smooth.
- 🥚 Temper the egg yolks with a little warm cheese, then whisk them into the pot until thickened.
- ✨ Season with white pepper and serve immediately in a warm bowl with toasted bread.
