Ingredients
- 🍆 Eggplant – cubed
- 🧅 Onion – chopped
- 🍅 Tomatoes – diced
- 🧄 Garlic – minced
- 🌶️ Green chilies – slit
- 🌿 Curry leaves – a few
- 🥄 Curry powder – 2 tbsp
Instructions
- 🔥 Heat oil and add curry leaves, then sauté onions until golden.
- 🧄 Add garlic and green chilies, then sauté for a minute.
- 🍅 Add tomatoes and cook until softened.
- 🍆 Add eggplant, curry powder, and salt; mix well.
- 🥘 Cover and simmer until eggplant is tender. Serve hot with rice or roti.
