Ingredients
- 🥔 Maris Piper or Russet potatoes – 1kg cut into thick batons
- 🍳 Vegetable oil – for deep frying
- 🧂 Sea salt – to taste
- 🌿 Rosemary or parsley – optional for garnish
Instructions
- 💧 Boil the potato batons in salted water for 10 minutes until tender but holding their shape.
- ❄️ Drain carefully and let them air dry completely, then chill in the fridge for 20 minutes.
- 🔥 Fry the potatoes in oil at 130°C (265°F) for 5 minutes until a light crust forms, then drain.
- ⚡ Heat oil to 180°C (350°F) and fry the potatoes again until deep golden and extra crispy.
- ✨ Season immediately with salt and serve hot for the perfect crunchy texture.
