Ingredients

  • 🥔 Maris Piper or Russet potatoes – 1kg cut into thick batons
  • 🍳 Vegetable oil – for deep frying
  • 🧂 Sea salt – to taste
  • 🌿 Rosemary or parsley – optional for garnish

Instructions

  • 💧 Boil the potato batons in salted water for 10 minutes until tender but holding their shape.
  • ❄️ Drain carefully and let them air dry completely, then chill in the fridge for 20 minutes.
  • 🔥 Fry the potatoes in oil at 130°C (265°F) for 5 minutes until a light crust forms, then drain.
  • ⚡ Heat oil to 180°C (350°F) and fry the potatoes again until deep golden and extra crispy.
  • ✨ Season immediately with salt and serve hot for the perfect crunchy texture.
