Ingredients
- 👂 Orecchiette pasta – 1 pound
- 🥦 Cime di rape (broccoli rabe) – 1 bunch
- 🧄 Garlic – 3 cloves, minced
- 🌶️ Red pepper flakes – to taste
- 🌿 Olive oil – for cooking
- 🧀 Pecorino Romano cheese – grated, for serving
- 🧂 Salt – to taste
- 💧 Water – for boiling pasta
Instructions
- 💧 Boil orecchiette pasta in salted water until al dente. Reserve some pasta water before draining.
- 🥦 While pasta cooks, blanch cime di rape in boiling water for a few minutes until slightly tender. Drain and chop.
- 🧄 In a large pan, heat olive oil and sauté garlic and red pepper flakes until fragrant.
- 🥦 Add the chopped cime di rape to the pan and cook for a few minutes, stirring occasionally.
- 🍝 Add the cooked orecchiette to the pan with the cime di rape. Toss to combine, adding reserved pasta water if needed to create a sauce.
- 🧀 Serve immediately, topped with grated Pecorino Romano cheese.
