Orecchiette e cime di rape

Ingredients

  • 👂 Orecchiette pasta – 1 pound
  • 🥦 Cime di rape (broccoli rabe) – 1 bunch
  • 🧄 Garlic – 3 cloves, minced
  • 🌶️ Red pepper flakes – to taste
  • 🌿 Olive oil – for cooking
  • 🧀 Pecorino Romano cheese – grated, for serving
  • 🧂 Salt – to taste
  • 💧 Water – for boiling pasta

Instructions

  • 💧 Boil orecchiette pasta in salted water until al dente. Reserve some pasta water before draining.
  • 🥦 While pasta cooks, blanch cime di rape in boiling water for a few minutes until slightly tender. Drain and chop.
  • 🧄 In a large pan, heat olive oil and sauté garlic and red pepper flakes until fragrant.
  • 🥦 Add the chopped cime di rape to the pan and cook for a few minutes, stirring occasionally.
  • 🍝 Add the cooked orecchiette to the pan with the cime di rape. Toss to combine, adding reserved pasta water if needed to create a sauce.
  • 🧀 Serve immediately, topped with grated Pecorino Romano cheese.
