Braciole al ragù

Ingredients

  • 🥩 Thin steak – for rolling
  • 🧀 Grated Pecorino Romano cheese – for filling
  • 🥖 Breadcrumbs – for filling
  • 🥓 Pancetta – diced, for filling
  • 🧅 Onion – finely chopped, for ragù
  • 🥕 Carrots – finely chopped, for ragù
  • 🍷 Red wine – for ragù
  • 🍅 Canned tomatoes – for ragù
  • 🌿 Fresh basil – for ragù

Instructions

  • 🥩 Prepare braciole by spreading filling ingredients on steak and rolling tightly; secure with twine.
  • 🧅 Sauté onion and carrots in a large pot; add braciole and brown on all sides.
  • 🍷 Deglaze pot with red wine, then add canned tomatoes and basil.
  • 🍅 Simmer gently for 2 hours, or until braciole is very tender and ragù has thickened.
  • 🍝 Serve braciole sliced, over pasta with ragù and extra cheese.
