Ingredients
- 🥩 Thin steak – for rolling
- 🧀 Grated Pecorino Romano cheese – for filling
- 🥖 Breadcrumbs – for filling
- 🥓 Pancetta – diced, for filling
- 🧅 Onion – finely chopped, for ragù
- 🥕 Carrots – finely chopped, for ragù
- 🍷 Red wine – for ragù
- 🍅 Canned tomatoes – for ragù
- 🌿 Fresh basil – for ragù
Instructions
- 🥩 Prepare braciole by spreading filling ingredients on steak and rolling tightly; secure with twine.
- 🧅 Sauté onion and carrots in a large pot; add braciole and brown on all sides.
- 🍷 Deglaze pot with red wine, then add canned tomatoes and basil.
- 🍅 Simmer gently for 2 hours, or until braciole is very tender and ragù has thickened.
- 🍝 Serve braciole sliced, over pasta with ragù and extra cheese.
