Ingredients
- 🍝 Mafaldine pasta – 8 oz
- 🍤 Shrimp (scampi) – 1 lb, peeled and deveined
- 🧄 Garlic – 4 cloves, minced
- 🍋 Lemon – 1, juiced
- 🌿 Parsley – 1/4 cup, chopped
- 🧈 Butter – 4 tbsp
- 🌶️ Red pepper flakes – to taste
- 🫒 Olive oil – 2 tbsp
- 🧂 Salt and pepper – to taste
Instructions
- 💧 Cook mafaldine pasta according to package directions until al dente. Reserve about 1 cup of pasta water.
- 🔥 While pasta cooks, melt butter and olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; cook until fragrant, about 1 minute.
- 🍤 Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side.
- 🍋 Stir in lemon juice and parsley. Season with salt and pepper.
- 🍝 Add the cooked pasta to the skillet. Toss to coat. Add reserved pasta water if needed to create a light sauce. Serve immediately.
