Ingredients

  • 🥬 Napa Cabbage – 1 medium head
  • 🌶️ Gochugaru (Korean chili powder) – 1/2 cup
  • 🧄 Garlic – 1 head, minced
  • Ginger – 1 thumb, minced
  • 🐟 Fish sauce – 1/4 cup
  • 🧅 Green onions – 1 bunch, chopped
  • 🍚 Cooked rice flour paste – 2 tbsp

Instructions

  • 🥬 Salt cabbage and let sit for 1-2 hours until wilted.
  • 🌶️ Prepare kimchi paste by mixing gochugaru, garlic, ginger, fish sauce, rice flour paste, and green onions.
  • 🧽 Rinse cabbage thoroughly and squeeze out excess water.
  • 🧤 Mix cabbage with kimchi paste, ensuring even coating.
  • 🥡 Pack kimchi into an airtight container and ferment at room temperature for 1-5 days, then refrigerate.
