Ingredients
- 🥬 Napa Cabbage – 1 medium head
- 🌶️ Gochugaru (Korean chili powder) – 1/2 cup
- 🧄 Garlic – 1 head, minced
- Ginger – 1 thumb, minced
- 🐟 Fish sauce – 1/4 cup
- 🧅 Green onions – 1 bunch, chopped
- 🍚 Cooked rice flour paste – 2 tbsp
Instructions
- 🥬 Salt cabbage and let sit for 1-2 hours until wilted.
- 🌶️ Prepare kimchi paste by mixing gochugaru, garlic, ginger, fish sauce, rice flour paste, and green onions.
- 🧽 Rinse cabbage thoroughly and squeeze out excess water.
- 🧤 Mix cabbage with kimchi paste, ensuring even coating.
- 🥡 Pack kimchi into an airtight container and ferment at room temperature for 1-5 days, then refrigerate.
