Ingredients

  • 🍝 Spaghetti – 200g
  • 🥓 Pancetta – 50g, diced
  • 🍄 Shiitake Mushrooms – 100g, sliced
  • 🧅 Onion – ½, finely chopped
  • 🧄 Garlic – 2 cloves, minced
  • 🥚 Egg yolks – 2
  • 🧀 Parmesan Cheese – 50g, grated
  • 🌿 Nori Seaweed – 2 sheets, thinly sliced
  • 🍶 Soy Sauce – 1 tbsp
  • 🌶️ Red Pepper Flakes – to taste

Instructions

  • 🍝 Cook spaghetti according to package directions.
  • 🥓 In a pan, sauté pancetta until crispy. Add onion and garlic, cook until softened.
  • 🍄 Add shiitake mushrooms and cook until tender.
  • 🥚 In a bowl, whisk egg yolks, parmesan cheese, soy sauce, and red pepper flakes.
  • 🔥 Drain spaghetti and add it to the pan. Toss with pancetta mixture. Remove from heat and quickly stir in the egg yolk mixture. Garnish with nori and serve immediately.
