Hyderabadi chicken dum biryani

Ingredients

  • 🍗 Chicken – 1kg cut into pieces
  • 🍚 Basmati rice – 3 cups soaked
  • 🧅 Onions – 3 large, thinly sliced and fried
  • 🥣 Yogurt – 1 cup whisked
  • 🌿 Mint & Cilantro – 1/2 cup chopped
  • 🧄 Ginger-Garlic paste – 2 tbsp
  • ✨ Biryani spices – Garam masala, turmeric, chili powder
  • 🥘 Ghee – 3 tbsp for aroma

Instructions

  • 🍗 Marinate chicken with yogurt, ginger-garlic paste, spices, and half the fried onions for at least 30 minutes.
  • 🍚 Boil rice in salted water with whole spices until 70% cooked, then drain.
  • 🥘 Layer the marinated chicken in a heavy-bottomed pot and top with the semi-cooked rice, mint, cilantro, and remaining fried onions.
  • 🔥 Seal the pot lid tightly with dough or foil and cook on very low heat (dum) for 30–40 minutes.
  • ✨ Gently fluff the rice and chicken together before serving hot with raita.
