Ingredients
- 🍗 Chicken joints – 500g cleaned leg/thigh pieces
- 🍃 Gongura leaves – 2 bunches, washed and plucked
- 🧅 Onions – 2 medium, finely chopped
- 🧄 Ginger-Garlic paste – 1 tbsp fresh
- 🌶️ Green chilies – 3-4 slit lengthwise
- 🧂 Spices – turmeric, red chili powder, and garam masala
- 🛢️ Cooking oil – 3 tbsp
- 🌿 Curry leaves – 1 sprig for aroma
Instructions
- 🍃 Sauté gongura leaves in a pan with a drop of oil until they wilt, then cool and grind into a paste.
- 🔥 Heat oil and sauté onions, green chilies, and ginger-garlic paste until golden brown.
- 🍗 Add chicken joints with turmeric and chili powder, searing the meat on high heat for 5 minutes.
- 🥘 Mix in the gongura paste and salt, add a splash of water, and simmer covered until the chicken is tender.
- ✨ Sprinkle with garam masala and curry leaves, then serve hot with steamed rice.
