Ingredients

  • 🍚 Chittimuthyalu Rice – 1 cup, washed and soaked
  • 🧈 Ghee – 2 tablespoons for richness
  • 🌿 Whole Spices – 1 bay leaf, 3 cloves, 2 cardamoms
  • 🧅 Onion – 1 large, thinly sliced
  • 🫚 Ginger-Garlic Paste – 1 tablespoon fresh
  • 🌶️ Green Chilies – 3-4 pieces, slit lengthwise
  • 🍃 Mint Leaves – a handful for aroma

Instructions

  • 🍚 Rinse the rice and soak it in water for 20 minutes before cooking.
  • 🔥 Heat ghee in a heavy-bottomed pot and sauté the whole spices until fragrant.
  • 🧅 Add sliced onions and green chilies, frying until the onions turn golden brown.
  • 🥘 Stir in ginger-garlic paste and mint, then add 2 cups of water and bring to a boil.
  • ✨ Add the soaked rice and salt, cover tightly, and cook on low heat until the water is fully absorbed.
