Ingredients
- 🌶️ Gochugaru (Korean chili powder) – 2 cups
- 🍚 Meju powder (fermented soybean powder) – 1 cup
- 🌾 Sweet rice flour – 1/2 cup
- 🍯 Barley malt syrup or honey – 1/4 cup
- 🧂 Sea salt – 1/2 cup
- 💧 Water – 4 cups
Instructions
- 🥣 Mix the water and sweet rice flour in a pot and simmer until thickened into a paste.
- 🍯 Remove from heat and stir in the malt syrup, allowing the mixture to cool completely.
- 🌶️ Gradually fold in the gochugaru and meju powder until the texture is smooth and consistent.
- 🧂 Add the salt and stir thoroughly to ensure it is evenly distributed for preservation.
- 🏺 Transfer to a sterilized glass jar and let it ferment in a cool, dark place before using.
