Ingredients

  • 🥒 Cucumber – diced

  • 🫑 Bell pepper – diced
  • 🧅 Red onion – thinly sliced
  • 🌿 Fresh herbs (dill, parsley) – chopped
  • 🍋 Lemon juice – to taste
  • 💧 Water or vegetable broth – as needed
  • 🧂 Salt and pepper – to taste

Instructions

  • 🔪 Prepare all vegetables by washing and dicing them into small, uniform pieces.
  • 🥣 In a large bowl, combine the diced cucumber, tomatoes, bell pepper, and red onion.
  • 🌿 Add the chopped fresh herbs (dill and parsley) to the vegetable mixture.
  • 🍋 Pour lemon juice over the vegetables and season with salt and pepper to taste. Adjust according to preference.
  • 💧 Add water or vegetable broth to the bowl until the soup reaches your desired consistency. Stir well.
