Ingredients
- 🍗 Chicken – 500g, bone-in pieces
- 🍚 Basmati Rice – 2 cups, long-grain soaked
- 🧅 Onions – 3 large, thinly sliced and fried until golden
- 🥣 Yogurt – 1 cup, for marination
- 🫚 Ginger-Garlic Paste – 2 tbsp
- 🌿 Mint & Cilantro – fresh leaves, chopped
- 🧈 Ghee – 3 tbsp
- 🧂 Biryani Masala & Spices – 2 tbsp blend
- 🌶️ Whole Spices – Cloves, cardamom, and cinnamon
Instructions
- 🍗 Marinate chicken with yogurt, ginger-garlic paste, spices, and fried onions for at least 30 minutes.
- 🍚 Par-cook basmati rice in boiling water with whole spices until it is 70% done, then drain.
- 🥘 Layer the marinated chicken at the bottom of a heavy pot and spread the rice, mint, and cilantro on top.
- 🔥 Seal the pot with a tight lid and cook on very low heat (Dum) for 30 minutes until the chicken is tender.
- ✨ Gently fluff the layers from the side and serve hot with cooling raita.
