Ingredients
- 🐷 Pork belly – 1 lb, cut into 1-inch cubes
- 🍚 Rice – 2 cups
- 🌰 Soy sauce – 1/4 cup
- 🍄 Dried shiitake mushrooms – 6, soaked
- 🧅 Onion – 1, chopped
- 🧄 Garlic – 3 cloves, minced
- 🥚 Hard-boiled eggs – 4
Instructions
- 🔥 Sear pork belly in a pot until browned.
- 🧅 Add onion and garlic, cook until fragrant.
- 🌰 Add soy sauce, water, and shiitake mushrooms. Bring to a simmer.
- 🥘 Braise pork for 60 minutes, or until tender. Add hard-boiled eggs during the last 20 minutes.
- 🍚 Serve braised pork and sauce over rice.
