Ingredients

  • 🐷 Pork belly – 1 lb, cut into 1-inch cubes
  • 🍚 Rice – 2 cups
  • 🌰 Soy sauce – 1/4 cup
  • 🍄 Dried shiitake mushrooms – 6, soaked
  • 🧅 Onion – 1, chopped
  • 🧄 Garlic – 3 cloves, minced
  • 🥚 Hard-boiled eggs – 4

Instructions

  • 🔥 Sear pork belly in a pot until browned.
  • 🧅 Add onion and garlic, cook until fragrant.
  • 🌰 Add soy sauce, water, and shiitake mushrooms. Bring to a simmer.
  • 🥘 Braise pork for 60 minutes, or until tender. Add hard-boiled eggs during the last 20 minutes.
  • 🍚 Serve braised pork and sauce over rice.
