Ingredients

  • 🧊 Firm tofu – pressed and cut into cubes
  • 🥔 Potato starch – for coating
  • 🍄 Shiitake mushrooms – thinly sliced
  • 🥣 Dashi stock – 1 cup
  • 🍶 Soy sauce – 2 tbsp
  • 🥢 Mirin – 2 tbsp
  • 🧅 Scallions – finely chopped for garnish
  • 🥕 Grated daikon radish – optional topping

Instructions

  • 🧊 Pat tofu very dry and coat evenly in potato starch, shaking off excess.
  • 🍳 Heat oil in a pan and fry tofu cubes until golden and crispy on all sides.
  • 🍲 Combine dashi, soy sauce, and mirin in a small saucepan and add mushrooms; simmer for 5 minutes.
  • 🥣 Place crispy tofu in bowls and pour the warm mushroom dashi sauce around the base.
  • ✨ Garnish with chopped scallions and grated daikon before serving immediately.
