Ingredients
- 🥬 Assorted vegetables (yasai) - chopped
- 🍚 Miso paste - 2 tablespoons
- 💧 Dashi or vegetable broth - 4 cups
- 🍄 Dried shiitake mushrooms - soaked and sliced
- 🌿 Green onions - chopped for garnish
- 🍶 Soy sauce - 1 tablespoon (optional)
Instructions
- 🍄 Soak dried shiitake mushrooms in warm water until softened. Slice thinly.
- 🔥 In a pot, bring dashi or vegetable broth to a simmer.
- 🥕 Add chopped vegetables and sliced shiitake mushrooms. Cook until tender.
- 🥄 In a small bowl, mix miso paste with a little of the warm broth until smooth. Add to the pot.
- 🍲 Simmer gently for a few minutes, being careful not to boil. Garnish with green onions and serve hot.
