Ingredients

  • 🥬 Assorted vegetables (yasai) - chopped
  • 🍚 Miso paste - 2 tablespoons
  • 💧 Dashi or vegetable broth - 4 cups
  • 🍄 Dried shiitake mushrooms - soaked and sliced
  • 🌿 Green onions - chopped for garnish
  • 🍶 Soy sauce - 1 tablespoon (optional)

Instructions

  • 🍄 Soak dried shiitake mushrooms in warm water until softened. Slice thinly.
  • 🔥 In a pot, bring dashi or vegetable broth to a simmer.
  • 🥕 Add chopped vegetables and sliced shiitake mushrooms. Cook until tender.
  • 🥄 In a small bowl, mix miso paste with a little of the warm broth until smooth. Add to the pot.
  • 🍲 Simmer gently for a few minutes, being careful not to boil. Garnish with green onions and serve hot.
