Ingredients
- 🍝 Capellini pasta – 8 oz
- 🧅 Onion – ½ cup, chopped
- 🧄 Garlic – 2 cloves, minced
- 🥫 Tomato paste – 2 tbsp
- 🍅 Crushed tomatoes – 1 can (28 oz)
- 🥛 Heavy cream – ½ cup
- 🍸 Vodka – ¼ cup
- 🌿 Fresh basil – chopped, for garnish
- 🧀 Parmesan cheese – grated, for serving
- 🌶️ Red pepper flakes – to taste
- 🧂 Salt & Pepper – to taste
- 🫒 Olive oil – 2 tbsp
Instructions
- 🍝 Cook capellini according to package directions. Reserve about ½ cup of pasta water before draining.
- 🔥 Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and red pepper flakes; cook for 1 minute more.
- 🍅 Stir in tomato paste and cook for 1 minute. Add crushed tomatoes and vodka. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- 🥛 Stir in heavy cream, salt, and pepper. Simmer for 5 minutes. If the sauce is too thick, add a little pasta water to thin it out.
- 🍝 Add the cooked capellini to the sauce and toss to coat. Serve immediately, garnished with fresh basil and grated Parmesan cheese. Enjoy! ✨
