Ingredients

  • 🧅 Onion – chopped
  • 🧄 Garlic – minced
  • 🫑 Bell pepper – sliced
  • 🍅 Canned tomatoes – crushed
  • 🥚 Eggs – 2 large
  • 🌿 Fresh herbs – parsley or cilantro

Instructions

  • 🔥 Sauté onion and bell pepper in a pan until softened.
  • 🧄 Add garlic and cook for another minute.
  • 🍅 Stir in crushed tomatoes and spices; simmer for 10 minutes.
  • 🥚 Make wells in the sauce and crack eggs into them.
  • 🍳 Cover and cook until eggs are set to your liking. Garnish and serve.
