Ingredients
- 🧅 Onion – chopped
- 🧄 Garlic – minced
- 🫑 Bell pepper – sliced
- 🍅 Canned tomatoes – crushed
- 🥚 Eggs – 2 large
- 🌿 Fresh herbs – parsley or cilantro
Instructions
- 🔥 Sauté onion and bell pepper in a pan until softened.
- 🧄 Add garlic and cook for another minute.
- 🍅 Stir in crushed tomatoes and spices; simmer for 10 minutes.
- 🥚 Make wells in the sauce and crack eggs into them.
- 🍳 Cover and cook until eggs are set to your liking. Garnish and serve.
