Stuffed Bell Peppers with Ground Turkey

Ingredients

  • 🫑 Bell peppers – 4 large, various colors
  • 🦃 Ground turkey – 1 lb
  • 🧅 Onion – 1 medium, chopped
  • 🍚 Cooked rice – 1 cup
  • 🍅 Diced tomatoes – 1 can (14.5 oz)
  • 🧀 Shredded cheese – 1 cup (cheddar or mozzarella)
  • 🧄 Garlic – 2 cloves, minced
  • 🌿 Italian seasoning – 1 tbsp
  • 🧂 Salt & pepper – to taste

Instructions

  • 🔥 Preheat oven to 375°F (190°C). Cut bell peppers in half lengthwise and remove seeds.
  • 🥘 In a large skillet, brown ground turkey over medium heat. Drain excess fat.
  • 🧅 Add onion and garlic to the skillet and cook until softened.
  • 🍚 Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  • 🫑 Fill each bell pepper half with the turkey mixture and place in a baking dish.
  • 🧀 Top with shredded cheese and bake for 30-40 minutes, or until peppers are tender and cheese is melted and bubbly.
  • ✨ Let cool slightly before serving.
