Ingredients
- 🫑 Bell peppers – 4 large, various colors
- 🦃 Ground turkey – 1 lb
- 🧅 Onion – 1 medium, chopped
- 🍚 Cooked rice – 1 cup
- 🍅 Diced tomatoes – 1 can (14.5 oz)
- 🧀 Shredded cheese – 1 cup (cheddar or mozzarella)
- 🧄 Garlic – 2 cloves, minced
- 🌿 Italian seasoning – 1 tbsp
- 🧂 Salt & pepper – to taste
Instructions
- 🔥 Preheat oven to 375°F (190°C). Cut bell peppers in half lengthwise and remove seeds.
- 🥘 In a large skillet, brown ground turkey over medium heat. Drain excess fat.
- 🧅 Add onion and garlic to the skillet and cook until softened.
- 🍚 Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
- 🫑 Fill each bell pepper half with the turkey mixture and place in a baking dish.
- 🧀 Top with shredded cheese and bake for 30-40 minutes, or until peppers are tender and cheese is melted and bubbly.
