Ingredients
- 🥚 Eggs – 2 large
- 🥘 Chicken Xacuti Gravy – 1/2 cup (leftover)
- 🧅 Onion – 1 small, finely chopped
- 🌶️ Green Chili – 1, chopped
- 🌿 Coriander – a handful, chopped
- 🧂 Salt – a pinch
Instructions
- 🍳 Whisk eggs with salt, onions, chili, and coriander in a small bowl.
- 🔥 Heat a non-stick pan with a little oil and pour in the egg mixture.
- 🥞 Cook until the bottom is set and the edges are golden brown, then flip.
- 🍛 Gently pour the warm chicken xacuti gravy over one half of the omelette.
- 🍽️ Fold the omelette over the gravy and serve hot with a side of bread.
