Roasted Sweet Potato Ice Cream

Ingredients

  • 2 large sweet potatoes, roasted and peeled 🍠
  • 2 cups heavy cream 🥛
  • 1 cup whole milk 🐄
  • 3/4 cup granulated sugar 🍬
  • 4 large egg yolks 🥚
  • 1 tsp vanilla extract 🍦
  • 1/2 tsp ground cinnamon 🪵
  • 1/4 tsp ground nutmeg 🥥

Instructions

  • Roast the sweet potatoes at 400°F (200°C) until tender, then peel and mash until smooth 🍠.
  • In a saucepan, heat the milk, cream, half the sugar, cinnamon, and nutmeg until steaming 🌡️.
  • Whisk the egg yolks and remaining sugar in a bowl until pale and thick 🥣.
  • Temper the egg mixture by slowly adding the hot cream, then return everything to the heat to thicken into a custard 🍳.
  • Stir in the sweet potato mash and vanilla extract until fully incorporated 🥄.
  • Chill the mixture thoroughly in the refrigerator for at least 4 hours ❄️.
  • Pour into an ice cream maker and churn according to the manufacturer's instructions 🍦.
  • Transfer to a container and freeze until firm before serving 🧊.
