Roasted Sweet Potato Ice Cream

Ingredients
- 2 large sweet potatoes, roasted and peeled 🍠
- 2 cups heavy cream 🥛
- 1 cup whole milk 🐄
- 3/4 cup granulated sugar 🍬
- 4 large egg yolks 🥚
- 1 tsp vanilla extract 🍦
- 1/2 tsp ground cinnamon 🪵
- 1/4 tsp ground nutmeg 🥥
Instructions
- Roast the sweet potatoes at 400°F (200°C) until tender, then peel and mash until smooth 🍠.
- In a saucepan, heat the milk, cream, half the sugar, cinnamon, and nutmeg until steaming 🌡️.
- Whisk the egg yolks and remaining sugar in a bowl until pale and thick 🥣.
- Temper the egg mixture by slowly adding the hot cream, then return everything to the heat to thicken into a custard 🍳.
- Stir in the sweet potato mash and vanilla extract until fully incorporated 🥄.
- Chill the mixture thoroughly in the refrigerator for at least 4 hours ❄️.
- Pour into an ice cream maker and churn according to the manufacturer's instructions 🍦.
- Transfer to a container and freeze until firm before serving 🧊.
