Ingredients
- 🥛 Heavy cream – 2 cups
- 🍵 Matcha powder – 1.5 tablespoons
- 🥚 Egg yolks – 4 large
- 🍬 Granulated sugar – 1/2 cup
- 🍦 Vanilla extract – 1 teaspoon
Instructions
- 🥣 Whisk egg yolks and half the sugar in a bowl until pale and smooth.
- 🍵 Heat cream in a saucepan until simmering, then whisk in the matcha powder until dissolved.
- 🥛 Gradually pour the hot cream into the egg mixture while whisking constantly to prevent curdling.
- 🍮 Pour mixture into ramekins and bake in a water bath at 325°F (160°C) for 35-40 minutes until set.
- 🔥 Sprinkle remaining sugar on top, caramelize with a kitchen torch, and let cool before serving.
