Ingredients

  • 🥛 Heavy cream – 2 cups
  • 🍵 Matcha powder – 1.5 tablespoons
  • 🥚 Egg yolks – 4 large
  • 🍬 Granulated sugar – 1/2 cup
  • 🍦 Vanilla extract – 1 teaspoon

Instructions

  • 🥣 Whisk egg yolks and half the sugar in a bowl until pale and smooth.
  • 🍵 Heat cream in a saucepan until simmering, then whisk in the matcha powder until dissolved.
  • 🥛 Gradually pour the hot cream into the egg mixture while whisking constantly to prevent curdling.
  • 🍮 Pour mixture into ramekins and bake in a water bath at 325°F (160°C) for 35-40 minutes until set.
  • 🔥 Sprinkle remaining sugar on top, caramelize with a kitchen torch, and let cool before serving.
