Ingredients

  • 🍚 Red rice – 1 cup, rinsed
  • 🍅 Tomato paste – 2 tbsp
  • 🧄 Garlic – 2 cloves, minced
  • 🧅 Red onion – 1 small, diced
  • 🫑 Bell pepper – 1/2, chopped
  • 🌿 Fresh parsley – for garnish

Instructions

  • 🍳 Heat oil in a pan and sauté the onions and garlic until fragrant.
  • 🍅 Stir in the tomato paste and bell peppers, cooking for 2 minutes.
  • 🍚 Add the red rice and water, then cover and simmer until tender.
  • 🥘 Fluff the rice with a fork once the liquid is fully absorbed.
