Ingredients
- 🥚 Eggs – 6 large, separated
- ☕ Espresso powder – 2 tbsp dissolved in water
- 🌰 Hazelnuts – 1/2 cup finely ground
- 🍰 Cake flour – 2 cups sifted
- 🍬 Granulated sugar – 1.5 cups
- 🥣 Baking powder – 2 tsp
- 🌻 Vegetable oil – 1/2 cup
- 🍫 Cocoa powder – 1/4 cup
Instructions
- 🥣 Whisk together flour, sugar, cocoa, baking powder, and ground hazelnuts in a large bowl.
- 🥚 Separate egg whites and beat until stiff peaks form; mix yolks with oil, espresso, and water.
- ⚖️ Gently fold the dry ingredients into the yolk mixture, then carefully fold in the stiff egg whites.
- 🎂 Pour the light batter into an ungreased tube pan and bake at 325°F (165°C) until golden brown.
- ✨ Invert the pan while cooling to maintain the airy structure, then remove and serve.
