Rajahmundry Fry Piece Biryani

Ingredients
- 500g Basmati rice 🍚
- 500g Chicken pieces 🍗, fried
- 2 large onions 🧅, thinly sliced
- 2 tomatoes 🍅, chopped
- 2 tbsp ginger-garlic paste 🧄
- 2-3 green chilies 🌶️, slit
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp garam masala
- 1/2 tsp biryani masala
- 1/4 cup chopped cilantro 🌿
- 1/4 cup chopped mint leaves 🍃
- 2 tbsp ghee/oil 🧈
- Salt to taste 🧂
- Saffron strands soaked in warm milk (optional)
- 2-3 tbsp curd (yogurt)
Instructions
- Wash and soak Basmati rice for 30 minutes. Drain and set aside. 🍚
- Heat ghee/oil in a heavy-bottomed pot. Add sliced onions and fry until golden brown. Remove half of the onions for garnish. 🧅
- Add ginger-garlic paste and green chilies to the pot. Sauté for a minute. 🧄🌶️
- Add chopped tomatoes, turmeric powder, red chili powder, garam masala, and biryani masala. Cook until the tomatoes are soft and the oil separates. 🍅
- Add the fried chicken pieces and yogurt. Mix well and cook for 5-7 minutes. 🍗
- Add the soaked rice to the pot and gently mix with the chicken masala. 🍚
- Add 3 cups of water (or as needed for rice) and salt to taste. Bring to a boil. 💦🧂
- Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked through. 🔥
- Garnish with saffron milk (if using), chopped cilantro, mint leaves, and the reserved fried onions. 🌿🍃
- Let it rest for 5-10 minutes before serving. Enjoy! 🎉
