Belal Mutton Biryani

Ingredients
- 1 kg Mutton 🥩 (cut into medium pieces)
- 750g Basmati Rice 🍚 (soaked for 30 mins)
- 4 large Onions 🧅 (finely sliced)
- 2 tbsp Ginger-Garlic paste 🧄
- 4-5 Green Chilies 🌶️ (slit)
- 2 large Tomatoes 🍅 (chopped)
- 1 cup Yogurt 🥛
- 1/2 cup Mint leaves 🌿
- 1/2 cup Coriander leaves 🌿
- 4 tbsp Biryani Masala 🧂
- 1 tsp Turmeric powder 💛
- 1 tsp Red Chili powder ❤️
- 1/2 tsp Saffron strands (soaked in warm milk) 🌼
- 4 tbsp Ghee/Oil 🧈
- 2 Bay leaves 🍃
- 4-5 Cloves
- 4-5 Green Cardamoms
- 1 inch Cinnamon stick
- Salt to taste 🧂
- Water 💧
Instructions
- Marinate Mutton: In a bowl, mix mutton with ginger-garlic paste, yogurt, biryani masala, turmeric powder, red chili powder, and salt. Marinate for at least 2 hours. ⏰
- Fry Onions: In a large pot, heat ghee/oil. Fry the sliced onions until golden brown and crispy. Remove half of the fried onions and set aside for garnishing. 🧅
- Sauté Mutton: In the same pot, add bay leaves, cloves, cardamom, and cinnamon stick. Sauté for a minute. Add the marinated mutton and cook on medium heat until the mutton is partially cooked and the oil separates. 🔥
- Add Tomatoes & Herbs: Add chopped tomatoes, green chilies, mint leaves, and coriander leaves to the mutton. Cook for another 5-7 minutes. 🌿🍅
- Cook Rice: In a separate pot, boil water with salt and bay leaves. Add the soaked rice and cook until it's 70% cooked. Drain the water. 🍚💧
- Layering: In the pot with the mutton, spread half of the partially cooked rice. Then, spread the remaining mutton over the rice. Top with the remaining rice. 🍚🥩
- Garnish & Dum: Sprinkle saffron milk and remaining fried onions over the rice. Cover the pot tightly with a lid and seal the edges with dough or foil. Cook on low heat (dum) for 30-40 minutes. 🔥
- Serve: Gently fluff the biryani with a fork and serve hot. Enjoy! 🍽️
