Jackfruit Biryani

Ingredients
- 1 kg Jackfruit (raw, chopped) 🍈
- 2 cups Basmati Rice 🍚
- 2 large Onions (sliced) 🧅
- 2 Tomatoes (chopped) 🍅
- 1 tbsp Ginger-Garlic paste 🧄
- 2 Green Chillies (slit) 🌶️
- 1/2 cup Yogurt 🥛
- 1/4 cup Mint leaves (chopped) 🌱
- 1/4 cup Coriander leaves (chopped)🌿
- 2 tbsp Biryani Masala 🌶️🧂
- 1 tsp Turmeric powder 💛
- 1 tsp Red Chilli powder 🔥
- 1/2 tsp Garam Masala ♨️
- 4 tbsp Oil 🛢️
- 2 tbsp Ghee 🧈
- Saffron strands (soaked in warm milk) 🌼
- Salt to taste 🧂
- Whole spices (Bay leaf, Cinnamon stick, Cardamom, Cloves) 🍃
Instructions
- Soak Basmati rice for 30 minutes. Drain and set aside. 🍚
- Heat oil in a pan. Add sliced onions and fry until golden brown. Remove half for garnishing. 🧅
- Add ginger-garlic paste and green chillies. Sauté for a minute. 🧄🌶️
- Add chopped tomatoes and cook until soft. 🍅
- Add jackfruit, turmeric powder, red chilli powder, biryani masala, and salt. Cook for 10 minutes. 🍈🌶️🧂
- Add yogurt, mint leaves, and coriander leaves. Cook for another 5 minutes. 🥛🌱🌿
- In a separate pot, boil rice with whole spices and salt until 70% cooked. Drain the water. 🍚🍃
- Layer the jackfruit mixture and rice in a large pot. Start with rice, then jackfruit, then rice.🍚🍈
- Pour saffron milk and ghee over the rice. 🌼🧈
- Cover the pot with a tight-fitting lid and cook on low heat (dum) for 20-25 minutes. 🔥
- Garnish with fried onions and serve hot. Enjoy! 🧅🎉
