Ingredients

  • 🥔 Potatoes – cubed
  • 🧅 Onion – chopped
  • 🥥 Coconut milk – 1 can
  • 🌶️ Red chilies – as needed
  • 🌿 Curry leaves – a few
  • 🧄 Garlic – minced
  • 🍅 Tomato – chopped
  • 🌱 Coriander – for garnish
  • ✨ Tamarind paste – 1 tbsp

Instructions

  • 🔥 Heat oil, add onions, garlic and sauté until golden brown.
  • 🍅 Add tomatoes, red chilies, and curry leaves. Sauté well.
  • 🥔 Add potatoes and tamarind paste. Cook for a few minutes.
  • 🥥 Pour coconut milk, add salt, and simmer until potatoes are tender.
  • 🌿 Garnish with fresh coriander and serve hot with rice. ✨
