Ingredients
- 🥔 Potatoes – cubed
- 🧅 Onion – chopped
- 🥥 Coconut milk – 1 can
- 🌶️ Red chilies – as needed
- 🌿 Curry leaves – a few
- 🧄 Garlic – minced
- 🍅 Tomato – chopped
- 🌱 Coriander – for garnish
- ✨ Tamarind paste – 1 tbsp
Instructions
- 🔥 Heat oil, add onions, garlic and sauté until golden brown.
- 🍅 Add tomatoes, red chilies, and curry leaves. Sauté well.
- 🥔 Add potatoes and tamarind paste. Cook for a few minutes.
- 🥥 Pour coconut milk, add salt, and simmer until potatoes are tender.
- 🌿 Garnish with fresh coriander and serve hot with rice. ✨
