Ingredients
- 🐙 Octopus – cleaned and diced
- 🍚 Arborio Rice – for risotto
- 🧅 Onion – finely chopped
- 🧄 Garlic – minced
- 🌿 Vegetable Broth – or seafood broth
- 🧀 Parmesan Cheese – grated
- 🍷 White Wine – dry
Instructions
- 🧅 Sauté onions and garlic in olive oil until softened.
- 🍚 Add Arborio rice and toast for 2-3 minutes.
- 🍷 Deglaze with white wine, then add broth gradually, stirring often.
- 🐙 Stir in the octopus and cook until rice is creamy and octopus is tender.
