Ingredients

  • 🐙 Octopus – cleaned and diced
  • 🍚 Arborio Rice – for risotto
  • 🧅 Onion – finely chopped
  • 🧄 Garlic – minced
  • 🌿 Vegetable Broth – or seafood broth
  • 🧀 Parmesan Cheese – grated
  • 🍷 White Wine – dry

Instructions

  • 🧅 Sauté onions and garlic in olive oil until softened.
  • 🍚 Add Arborio rice and toast for 2-3 minutes.
  • 🍷 Deglaze with white wine, then add broth gradually, stirring often.
  • 🐙 Stir in the octopus and cook until rice is creamy and octopus is tender.
  • 🧀 Stir in Parmesan cheese and serve hot with garnish.
