Ingredients
- 🍆 Eggplants – small
- 🍚 Rice – medium grain
- 🌿 Fresh herbs (parsley, mint, dill) – chopped
- 🧅 Onion – finely chopped
- 🍅 Tomatoes – pureed
- 🧄 Garlic – minced
- 🍋 Lemon juice – fresh
- 🫙 Olive oil
- 🌶️ Spices (cumin, coriander, allspice)
- 💧 Water or broth
Instructions
- 🍚 Prepare the rice mixture: Combine rice, herbs, onion, tomatoes, garlic, spices, and lemon juice.
- 🍆 Hollow out eggplants, zucchini or other vegetables, reserving the pulp for later use, and stuff with the rice mixture.
- 🥘 Arrange the stuffed vegetables in a pot, add water or broth, and the reserved pulp.
- 🔥 Cover and simmer over low heat until the vegetables are tender and the rice is cooked through.
- 🍋 Serve warm with a squeeze of fresh lemon juice and a drizzle of olive oil. Enjoy!
