Ingredients
- 🍝 Mafalde pasta – 8 oz
- 🍄 Assorted mushrooms – 1 lb
- 🧄 Garlic – 2 cloves, minced
- 🌿 Fresh parsley – 1/4 cup, chopped
- 🥛 Heavy cream – 1/2 cup
- 🧀 Parmesan cheese – for grating
- 🧅 Shallot – 1 small, minced
- 🥄 Olive oil
- 🧂 Salt and pepper
Instructions
- 💧 Cook mafalde pasta according to package directions until al dente; reserve some pasta water. 🍝
- 🍄 Sauté minced shallot and garlic in olive oil until softened. Add mushrooms and cook until browned and tender. 🧅
- 🥛 Stir in heavy cream and bring to a simmer. Season with salt and pepper. 🧂
- 🍝 Add cooked pasta to the mushroom sauce and toss to coat. Add a little pasta water if needed to create a creamy sauce. 💦
- 🌿 Garnish with fresh parsley and grated Parmesan cheese. Serve immediately. 🧀
