Homemade buttermilk ricotta with herb oil

Ingredients
- 🥛 Buttermilk – 4 cups
- 🍋 Lemon juice – 2 tbsp
- 🌿 Fresh herbs (basil, thyme, rosemary) – 1/4 cup
- 🫒 Olive oil – 1/4 cup
- 🧂 Salt – to taste
Instructions
- 🔥 Heat buttermilk in a pot until it begins to curdle.
- 🍋 Stir in lemon juice and simmer gently until whey separates.
- 🧀 Strain through cheesecloth to separate ricotta.
- 🌿 Blend olive oil and herbs to make herb oil.
- ✨ Drizzle herb oil over ricotta and season with salt. Serve chilled.
