Homemade buttermilk ricotta with herb oil

Ingredients

  • 🥛 Buttermilk – 4 cups
  • 🍋 Lemon juice – 2 tbsp
  • 🌿 Fresh herbs (basil, thyme, rosemary) – 1/4 cup
  • 🫒 Olive oil – 1/4 cup
  • 🧂 Salt – to taste

Instructions

  • 🔥 Heat buttermilk in a pot until it begins to curdle.
  • 🍋 Stir in lemon juice and simmer gently until whey separates.
  • 🧀 Strain through cheesecloth to separate ricotta.
  • 🌿 Blend olive oil and herbs to make herb oil.
  • ✨ Drizzle herb oil over ricotta and season with salt. Serve chilled.
