Ingredients
- 🥚 Eggs – 4 large for poaching
- 🍞 English Muffins – 2 split and toasted
- 🥓 Canadian Bacon – 4 slices (or ham)
- 🧈 Butter – 1/2 cup melted for sauce
- 🍳 Egg Yolks – 2 for Hollandaise
- 🍋 Lemon Juice – 1 tbsp
- 🌿 Chives – finely chopped for garnish
Instructions
- 🍋 Whisk egg yolks and lemon juice over a double boiler, then slowly drizzle in melted butter to create a creamy Hollandaise sauce.
- 🥓 Lightly sear the bacon slices in a pan over medium heat until warmed through.
- 💧 Gently poach the eggs in simmering water with a splash of vinegar for 3-4 minutes until the whites are set.
- 🍞 Place bacon on the toasted English muffin halves and carefully top with a poached egg.
- ✨ Drizzle the warm Hollandaise sauce over the eggs and garnish with fresh chives.
