Ingredients

  • 🥩 Beef chuck – 3 lbs, cut into large chunks
  • 🧅 Onions – 2 large, chopped
  • 🥕 Carrots – 2, chopped
  • 🌿 Thyme – 2 sprigs
  • 🍷 Red wine – 1 cup
  • 🥣 Beef broth – 4 cups
  • 🧄 Garlic – 4 cloves, minced
  • 🧂 Salt and pepper – to taste
  • 🌻 Olive oil – 2 tbsp

Instructions

  • 🔥 Sear beef in olive oil until browned on all sides.
  • 🧅 Sauté onions, carrots, and garlic until softened.
  • 🍷 Deglaze the pot with red wine, scraping up any browned bits.
  • 🥣 Add beef broth, thyme, salt, and pepper. Bring to a simmer.
  • 🥘 Cover and braise in a 325°F (160°C) oven for 3 hours, or until beef is very tender.
  • ✨ Serve hot with mashed potatoes or crusty bread.
