Ingredients

  • 🍆 Eggplant – large
  • 🍋 Lemon Juice – 2 tbsp
  • 🧄 Garlic – 2 cloves, minced
  • 🥄 Tahini – 2 tbsp
  • 🌿 Parsley – chopped, for garnish
  • Olive Oil – for drizzling
  • 🧂 Salt – to taste

Instructions

  • 🍆 Roast eggplant until skin is charred and flesh is soft.
  • 🥄 Scoop out the flesh and mash or blend until smooth.
  • 🍋 Add tahini, lemon juice, garlic, and salt. Mix well.
  • 🌿 Garnish with parsley and drizzle with olive oil.
  • 🥖 Serve with pita bread or vegetables.
