Ingredients

  • 🥔 Baby potatoes – boiled and peeled
  • 🧅 Onions – finely chopped
  • 🍅 Tomatoes – pureed
  • 🧄 Ginger-garlic paste – 1 tbsp
  • 🌶️ Red chili powder – 1 tsp
  • 🌱 Coriander powder – 1 tsp
  • 🌿 Garam masala – 1/2 tsp
  • 🥛 Yogurt – 2 tbsp
  • 🍃 Fresh coriander leaves – for garnish
  • 🫘 Cooking oil – for frying

Instructions

  • 🥔 Lightly prick or score the boiled potatoes.
  • 🔥 Heat oil in a pan and fry the potatoes until golden brown. Remove and set aside.
  • 🧅 In the same pan, add more oil and sauté onions until golden brown. Add ginger-garlic paste and sauté for a minute.
  • 🍅 Add tomato puree and cook until the oil separates. Add red chili powder, coriander powder, garam masala, and salt. Cook for 2-3 minutes.
  • 🥛 Whisk yogurt until smooth and add to the pan. Cook until the mixture thickens.
  • 🥘 Add the fried potatoes and enough water to form a gravy. Simmer until the potatoes are tender and the gravy has thickened.
  • 🌿 Garnish with fresh coriander leaves and serve hot with rice or naan.
