Ingredients

  • Puri
  • Coconut Milk: Full-fat
  • Galangal: Sliced
  • Lemongrass: Bruised
  • Kaffir Lime Leaves: Torn
  • Red Chilies: Sliced (adjust to taste)
  • Mushrooms: Sliced (e.g., shiitake or oyster)
  • Cherry Tomatoes: Halved
  • Fish Sauce
  • Lime Juice
  • Sugar
  • Cilantro: Chopped, for garnish 🌿
  • Water: Optional, to thin the sauce

Instructions

  • Prepare the Tom Kha broth: In a saucepan, combine coconut milk, galangal, lemongrass, kaffir lime leaves, and red chilies. Bring to a simmer over medium heat. 🔥
  • Add mushrooms and cherry tomatoes to the simmering broth. Cook for 5-7 minutes, or until the mushrooms are tender. 🍄🍅
  • Season the broth with fish sauce, lime juice, and sugar. Taste and adjust seasonings as needed. Add water if the broth is too thick. 🧂🍋
  • Gently crack a small hole in the top of each puri. 🥄
  • Spoon the Tom Kha broth into each puri. Be careful not to overfill them. 🥣
  • Garnish with chopped cilantro. 🌱
  • Serve immediately and enjoy! 🎉
