Ingredients
- Puri
- Coconut Milk: Full-fat
- Galangal: Sliced
- Lemongrass: Bruised
- Kaffir Lime Leaves: Torn
- Red Chilies: Sliced (adjust to taste)
- Mushrooms: Sliced (e.g., shiitake or oyster)
- Cherry Tomatoes: Halved
- Fish Sauce
- Lime Juice
- Sugar
- Cilantro: Chopped, for garnish 🌿
- Water: Optional, to thin the sauce
Instructions
- Prepare the Tom Kha broth: In a saucepan, combine coconut milk, galangal, lemongrass, kaffir lime leaves, and red chilies. Bring to a simmer over medium heat. 🔥
- Add mushrooms and cherry tomatoes to the simmering broth. Cook for 5-7 minutes, or until the mushrooms are tender. 🍄🍅
- Season the broth with fish sauce, lime juice, and sugar. Taste and adjust seasonings as needed. Add water if the broth is too thick. 🧂🍋
- Gently crack a small hole in the top of each puri. 🥄
- Spoon the Tom Kha broth into each puri. Be careful not to overfill them. 🥣
- Garnish with chopped cilantro. 🌱
- Serve immediately and enjoy! 🎉
