Ingredients
- 🥥 Coconut milk – 1 can
- 🌶️ Red curry paste – 2 tbsp
- 🥦 Mixed vegetables (broccoli, peppers, etc.) – 2 cups
- 🍗 Chicken or tofu – 1 lb, cubed
- 🍚 Cooked rice – for serving
Instructions
- 🔥 Heat coconut milk in a pot and add red curry paste. Stir well.
- 🥕 Add vegetables and protein (chicken/tofu).
- 🍲 Simmer until vegetables are tender and protein is cooked through.
- 🍚 Serve hot over rice.
- 🌿 Garnish with fresh cilantro.
