Ingredients

  • 🥥 Coconut milk – 1 can
  • 🌶️ Red curry paste – 2 tbsp
  • 🥦 Mixed vegetables (broccoli, peppers, etc.) – 2 cups
  • 🍗 Chicken or tofu – 1 lb, cubed
  • 🍚 Cooked rice – for serving

Instructions

  • 🔥 Heat coconut milk in a pot and add red curry paste. Stir well.
  • 🥕 Add vegetables and protein (chicken/tofu).
  • 🍲 Simmer until vegetables are tender and protein is cooked through.
  • 🍚 Serve hot over rice.
  • 🌿 Garnish with fresh cilantro.
