Ingredients

  • 🥔 Potatoes – grated
  • 🍳 Eggs – 2 large
  • 🧅 Onion – finely chopped
  • 🧈 Butter – for frying
  • 🌿 Fresh herbs – chopped, for garnish
  • 🧂 Salt & Pepper – to taste

Instructions

  • 🥔 Squeeze excess moisture from grated potatoes. Mix with salt, pepper, and chopped onion.
  • 🔥 Heat butter in a pan. Form potato mixture into flat rostis and cook until golden brown and crispy on both sides.
  • 🍳 In a separate pan, cook sunny side up eggs to your liking.
  • ✨ Place the cooked egg on top of the potato rosti.
  • 🌿 Garnish with fresh herbs and serve immediately.
