Ingredients
- 🥔 Potatoes – grated
- 🍳 Eggs – 2 large
- 🧅 Onion – finely chopped
- 🧈 Butter – for frying
- 🌿 Fresh herbs – chopped, for garnish
- 🧂 Salt & Pepper – to taste
Instructions
- 🥔 Squeeze excess moisture from grated potatoes. Mix with salt, pepper, and chopped onion.
- 🔥 Heat butter in a pan. Form potato mixture into flat rostis and cook until golden brown and crispy on both sides.
- 🍳 In a separate pan, cook sunny side up eggs to your liking.
- ✨ Place the cooked egg on top of the potato rosti.
- 🌿 Garnish with fresh herbs and serve immediately.
